A delightful meal combining tender pasta, rich salmon, and vibrant spinach in a luscious cream sauce, perfect for weeknight dinners.

Ingredients

  • 2 salmon fillets
  • 8 oz pasta (fettuccine or your choice)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the salmon fillets. Season with salt and pepper, cooking for about 4-5 minutes on each side until flaky. Remove from the skillet and set aside.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the heavy cream and bring it to a gentle simmer.
  5. Add the fresh spinach until it wilts.
  6. Flake the cooked salmon and add it back to the skillet along with the pasta, tossing everything together until well combined.

Notes

For alternative proteins, consider substituting salmon with shrimp or grilled chicken. You can also use half-and-half instead of heavy cream for a lighter dish.
