Smothered Chicken and Rice

A comforting dish featuring tender chicken, creamy soup, and nutritious veggies, perfect for busy weeknights.

Ingredients

  • 2 cups chicken breast, diced
  • 1 cup rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat and sauté the onions and garlic until they become translucent.
  2. Add the diced chicken and cook until it’s browned on all sides.
  3. Stir in the rice, cream of chicken soup, chicken broth, and paprika, mixing everything well.
  4. Bring the mixture to a simmer, then cover and reduce the heat to low.
  5. Cook for about 20 minutes until the rice is tender, then stir in the broccoli and cover for another 5 minutes.

Notes

Serve with a salad or steamed vegetables. Can be frozen for up to 2 months.
