Instructions
Start by preparing the cheesecake filling. In a bowl, combine the cold cream cheese, 3 tablespoons of sugar, and 0.5 teaspoon of vanilla extract. Blend until creamy and smooth, then set aside.
Next, make the strawberry jam. In a saucepan, stir together the chopped strawberries and 0.25 cup of sugar, cooking over medium heat. Simmer for about 10 minutes until thickened. Remove from heat and let cool.
To create the cookie dough, cream together 1 cup of softened butter and 1 cup of sugar until light and fluffy. Add 1 large egg and 2 teaspoons of vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry mix to the wet ingredients, stirring until combined.
Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
Assemble the cookies by taking a scoop of cookie dough, flattening it, and placing a teaspoon of cheesecake filling and a teaspoon of strawberry jam in the center. Fold the dough around the filling and roll into a ball. Roll in 0.25 cup of sugar before placing on the baking sheet.
Bake for approximately 12 to 15 minutes, or until edges are lightly golden. Let cool slightly before transferring to a wire rack.
