A quick, comforting creamy tomato garlic pasta that’s budget-friendly and delicious, perfect for weeknight dinners.

Ingredients

  • 8 ounces pasta of choice (spaghetti, penne, or fusilli)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1/4 cup grated Parmesan cheese, plus extra for serving
  • Fresh basil for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package directions. Drain, reserve a cup of pasta water, and set the pasta aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 1 minute, stirring constantly so it does not brown.
  4. Pour in the crushed tomatoes and bring the sauce to a gentle simmer. Let it cook for about 5 minutes to reduce slightly and deepen the flavor.
  5. Stir in the heavy cream and the Italian seasoning. Taste and season with salt and pepper. If the sauce seems too thick, add a splash of reserved pasta water to loosen it.
  6. Add the cooked pasta to the skillet and toss until each strand or piece is evenly coated with sauce. Heat briefly to marry the flavors.
  7. Remove the pan from the heat and stir in the Parmesan until it melts into the sauce.
  8. Serve immediately, garnished with torn fresh basil and extra Parmesan if desired.

Notes

For gluten-free, use gluten-free pasta; for a lighter sauce, swap heavy cream for half-and-half or blended cashew cream. Store leftovers in an airtight container for up to 4 days.
