A comforting creamy pasta dish featuring tender pasta, savory mushrooms, and a rich creamy sauce, perfect for busy weeknights or cozy weekends.

Ingredients

  • 8 oz Pasta (Any type like spaghetti or penne)
  • 8 oz Mushrooms (Fresh varieties such as cremini or shiitake)
  • 2 tbsp Olive Oil (Can substitute with butter)
  • 23 cloves Garlic (Freshly minced)
  • 2 cups Fresh Spinach (Can substitute with kale)
  • 1 cup Heavy Cream (Substitute with half-and-half or coconut milk)
  • 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)
  • to taste Salt
  • to taste Pepper

Instructions

  1. Bring a large pot of water to a boil and add a generous amount of salt. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms, and sauté until the mushrooms are tender and the garlic is fragrant, about 3-5 minutes.
  3. Stir in the fresh spinach and cook until wilted, which should take an additional 2 minutes.
  4. Reduce the heat to low and pour in the heavy cream, stirring to combine. Add the Parmesan cheese gradually, allowing it to melt into the sauce. Season the sauce with salt and pepper to taste.
  5. Combine the cooked pasta with the creamy sauce, carefully tossing to coat the pasta evenly.

Notes

For extra flavor, consider adding herbs such as thyme or basil. Use a variety of mushrooms for a richer taste.
