A rich and delightful vegan dish featuring creamy cashew sauce and sun-dried tomatoes, perfect for a weeknight dinner.

Ingredients

  • 200g pasta (your choice)
  • 1 cup raw cashews (soaked for at least 2 hours)
  • 1/2 cup sun-dried tomatoes (packed in oil, drained)
  • 1 garlic clove
  • 1 cup vegetable broth
  • 2 tablespoons nutritional yeast
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Vegan parmesan for garnish (optional)
  • Red pepper flakes for garnish (optional)

Instructions

  1. Boil water and cook your choice of pasta according to the package instructions.
  2. Soak raw cashews for at least two hours to ensure a creamy sauce.
  3. Blend soaked cashews with sun-dried tomatoes, garlic, and vegetable broth until smooth.
  4. Combine the cooked pasta with the creamy sauce in a skillet.
  5. Stir well to ensure every piece of pasta is coated.

Notes

Soaking the cashews longer will enhance the creaminess of the sauce. Adjust seasoning to taste.
