A refreshing salad that combines the crispness of cucumber with the sweetness of apples, perfect for a light lunch or side dish.

Ingredients

  • 1 medium English cucumber (about 2 ½ cups), chopped
  • 2 red apples, cored and chopped
  • 1 tablespoon honey
  • ½ tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Chop the apples and cucumber into small bite-size pieces.
  2. Whisk together apple cider vinegar, lemon juice, and honey in a small bowl.
  3. Combine the dressing with the chopped salad ingredients.
  4. Season to taste with salt and pepper and gently stir until evenly coated.

Notes

Best served fresh, but can be stored in an airtight container in the refrigerator for a few hours. Freezing is not recommended.
