A fantastic plant-based alternative to buffalo wings, these crispy bites are perfect for game day or as a healthy appetizer.

Ingredients

  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup milk (or dairy-free alternative)
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup buffalo hot sauce
  • 2 tbsp melted butter
  • 1 tbsp honey
  • Ranch or blue cheese dressing, for serving
  • Celery sticks, for serving

Instructions

  1. Preheat your oven to 450°F (230°C) and line a large baking sheet with parchment paper.
  2. Whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper in a large bowl to form a smooth batter.
  3. Add the cauliflower florets to the bowl and toss until evenly coated in the batter.
  4. Arrange the coated cauliflower in a single layer on the prepared baking sheet. Bake for 20 minutes, flipping halfway through.
  5. Whisk together the buffalo hot sauce, melted butter, and honey in a separate bowl while baking.
  6. After the initial bake, dip each floret into the buffalo sauce and return to the baking sheet. Bake for another 10-15 minutes until crispy.

Notes

For extra crispy bites, consider adding breadcrumbs to the batter. Marinate the cauliflower in the buffalo sauce before baking for deeper flavor.
