A simple and nutritious chicken fried rice recipe perfect for busy weeknights, featuring colorful vegetables and leftover chicken.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large pan over medium heat.
  2. Add the mixed vegetables and sauté until they are tender.
  3. Push the vegetables to one side of the pan and pour in the beaten eggs. Scramble them until they are fully cooked.
  4. Add the cooked rice and diced chicken to the pan, mixing thoroughly to combine all the ingredients.
  5. Pour the soy sauce over the mixture and stir well, cooking for an additional 2-3 minutes.
  6. Stir in the sliced green onions and season with salt and pepper.

Notes

Use day-old rice for the best texture. Feel free to customize the vegetables based on your preferences.
