Quick and satisfying egg and cheese toasts that are crisp at the edges and soft in the center, perfect for any meal.

Ingredients

  • 2 slices hearty sandwich bread
  • 1 large egg
  • 1/2 cup (2 ounces) grated cheese (cheddar, pepper jack, or gruyere)
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary) or 1/4 teaspoon dried
  • Salt and freshly ground black pepper to taste
  • Pinch of cayenne (optional)

Instructions

  1. Lightly toast the bread, or broil each side for 1 to 2 minutes until just golden.
  2. Preheat the oven to 400°F.
  3. Crack the egg into a small bowl and beat until fully combined and slightly frothy.
  4. Stir in the grated cheese, chopped herbs, a pinch of salt, and a few grinds of black pepper.
  5. Spoon and spread the mixture evenly to the edges of each toasted slice. Add a pinch of cayenne on top if you like heat.
  6. Bake for 10 to 12 minutes, or until the topping is puffed and golden and the center is set. Let cool a minute before serving.

Notes

Use day-old bread for extra crispness. Fresh herbs brighten the flavor, and you can substitute with mild cheddar or fontina for a milder finish.
