Crispy Parmesan chicken features thin, golden cutlets with a rich garlic-Parmesan cream sauce, perfect for a quick and comforting dinner.

Ingredients

  • 4 small to medium chicken breasts (or 2 large breasts halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 to 4 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped spinach (optional)

Instructions

  1. Pat the chicken dry and season both sides with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  3. Add chicken and cook 5 to 6 minutes per side until the exterior is deep golden and an instant-read thermometer reads 165 degrees F (74 degrees C).
  4. Remove the chicken to a plate and tent loosely with foil.
  5. Lower the heat to medium-low. Add minced garlic to the pan and sauté about 30 seconds until fragrant.
  6. Pour in the cream while stirring to deglaze the pan and pick up any browned bits.
  7. Stir in Italian seasoning and grated Parmesan until the sauce is smooth and slightly thickened.
  8. Add chopped spinach, if using, and simmer 2 to 3 minutes until wilted and blended into the sauce.
  9. Return chicken to the skillet and spoon sauce over each piece. Simmer 1 minute to reheat the chicken and marry the flavors.
  10. Remove from heat and serve hot with your chosen sides.

Notes

Serve with pasta, mashed potatoes, or roasted vegetables. For a twist, add lemon zest or sautéed mushrooms.
