A quick and impressive weeknight dinner featuring flaky salmon topped with a crunchy Parmesan and breadcrumb crust.

  • 4 salmon fillets (about 6 ounces each), skin on or off as preferred
  • 1 cup Parmesan cheese, finely grated
  • 1 cup breadcrumbs (panko for extra crunch)
  • 2 tablespoons olive oil (plus extra if crust seems dry)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the grated Parmesan, breadcrumbs, garlic powder, salt, and black pepper until evenly combined.
  3. Brush each salmon fillet lightly with olive oil to help the crust stick.
  4. Press the Parmesan-breadcrumb mixture onto the top of each fillet so it forms a compact layer.
  5. Arrange the fillets on the prepared baking sheet, crust side up, and tuck lemon slices on top of each piece.
  6. Bake for 12 to 15 minutes, until the crust is golden and the salmon flakes easily with a fork.
  7. Remove from the oven, let rest for 2 minutes, garnish with chopped parsley, and serve with extra lemon wedges.

Notes

Use freshly grated Parmesan for the best flavor and texture. For a low-carb option, substitute almond meal for the breadcrumbs.
