A fast and comforting dinner of chicken breasts coated in a cheesy Ritz cracker crust, baked to perfection and served with a creamy sauce.

  • 4 boneless, skinless chicken breasts
  • 1 sleeve Ritz crackers, crushed (about 1 1/2 to 2 cups crumbs)
  • 2 cups shredded cheddar cheese
  • 1/4 cup milk (for wash)
  • 1 large egg
  • Salt, to taste
  • Garlic pepper, to taste
  • 1 can (10 oz) cream of chicken soup
  • 1/4 cup milk (for sauce)
  • 2 tablespoons sour cream
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Pat the chicken breasts dry with paper towels. Trim any excess fat and pound to even thickness if needed for uniform cooking.
  3. In a shallow bowl, crush the Ritz crackers into coarse crumbs and mix in the shredded cheddar until evenly combined.
  4. In a separate bowl, whisk the 1/4 cup milk and egg together until smooth. Season the wash with salt and garlic pepper to taste.
  5. Dip each chicken breast into the egg wash, coating completely.
  6. Press the wet chicken into the cracker and cheese mixture, firming the crumbs so they adhere and create an even crust.
  7. Place the coated breasts on the prepared baking sheet, leaving space between pieces so hot air circulates and the crust crisps.
  8. Bake for 25 to 30 minutes, or until the internal temperature reads 165°F (74°C) and the coating is golden brown.
  9. While the chicken bakes, place the cream of chicken soup, 1/4 cup milk, sour cream, and butter in a small saucepan. Stir over low heat until smooth and the butter melts. Keep warm.
  10. Let the chicken rest for 3 to 5 minutes after baking. Spoon or drizzle the warm creamy sauce over each breast just before serving.

Notes

For a lighter crust, swap Ritz for panko or use gluten-free crackers. Sharp cheddar enhances flavor significantly.
