A tasty, hands-off dish featuring tender shredded chicken in a creamy, spiced tomato sauce tossed with penne pasta, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced (any color)
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta (or pasta of choice)
  • Fresh parsley, chopped for garnish

Instructions

  1. Pat the chicken dry and place it in a large bowl. Drizzle with olive oil and sprinkle with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the spices into the chicken.
  2. Heat a large skillet over medium heat and sear the chicken for 2 to 3 minutes per side until lightly browned. Transfer to the slow cooker.
  3. Scatter the sliced bell pepper, small onion, and minced garlic over the chicken.
  4. Pour in the diced tomatoes and chicken broth, without stirring. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours.
  5. Remove the chicken once cooked, shred with forks, and return it to the slow cooker.
  6. Stir in heavy cream and Parmesan until melted and creamy. Cook pasta as directed, drain, then add to the slow cooker and mix.
  7. Let everything heat together on low for 15 to 20 minutes before serving with parsley on top.

Notes

You can use different pasta shapes or a lighter sauce variation. Adjust the spice level according to taste.
