A comforting dish of tender chicken breasts coated in a cheesy, garlicky mixture with hearty baby potatoes, all cooked slowly to perfection.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Mix garlic, Parmesan, and seasonings in a bowl.
  2. Coat chicken breasts with olive oil then press the cheese mixture onto each piece.
  3. Layer halved baby potatoes at the bottom of the crock pot.
  4. Place the coated chicken on top and pour in chicken broth.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours.

Notes

For best results, ensure the chicken is fully cooked to an internal temperature of 165°F. To thicken the sauce, remove the lid for the last 30 minutes of cooking.
