A simple, hearty pasta dish made in a crockpot with ground beef, cream cheese, and cheddar for a rich, creamy sauce.

  • 8 oz cream cheese, cubed
  • 1 (1 oz) packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 cups beef broth
  • 12 oz rotini or penne pasta
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Brown ground beef in a skillet and drain fat.
  2. Combine beef with cream cheese, ranch seasoning, cheddar, sour cream, and beef broth in the crockpot.
  3. Cover and cook on low for 3 to 4 hours, stirring occasionally.
  4. Add uncooked pasta during the last 30 to 40 minutes of cooking.
  5. Stir and let the pasta finish cooking, absorbing all flavors.

Notes

For a lighter version, substitute with lower-fat cream cheese or sour cream. Store leftovers in an airtight container; stays fresh for 3-4 days in the fridge.
