A simple, comforting soup that stretches an affordable pound of ground beef into a family-sized dinner with tender potatoes and a rich, cheesy finish.

  • 1 lb ground beef
  • 4 medium potatoes, diced (Yukon Gold or russet)
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups beef broth (low-sodium)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Heat a skillet over medium. Add the ground beef and cook until no pink remains, breaking it up as it browns. Drain excess fat and transfer the beef to the crockpot.
  2. Add the diced potatoes, chopped onion, sliced carrots, and chopped celery to the crockpot. Sprinkle in the garlic powder, dried thyme, salt, and pepper. Pour in the beef broth. Stir gently to combine.
  3. Cover and cook on low for 6 to 8 hours, or until the potatoes and vegetables are fork-tender.
  4. About 30 minutes before serving, stir in the heavy cream. Add the shredded cheddar cheese and stir until melted and incorporated. Taste and adjust seasoning.
  5. Ladle into bowls and serve hot.

Notes

For a thicker soup, mash a few potato pieces against the side of the crockpot toward the end. This soup pairs well with crusty bread or warm dinner rolls.
