Hearty and comforting, these beef bites and potatoes are cooked low and slow in a crockpot, featuring garlic butter for rich flavor.

Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 pound baby potatoes, halved (Yukon gold or red)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons salt (adjust to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • 1/2 cup beef broth (low-sodium)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Pat the beef cubes dry with paper towels.
  2. Toss the beef with olive oil, salt, pepper, thyme, rosemary, and paprika until evenly coated.
  3. Heat a skillet over medium-high and sear the beef cubes in batches until nicely browned, about 2 minutes per side.
  4. Transfer the seared beef to the crockpot.
  5. Reduce heat to low in the same skillet and add melted butter and minced garlic, cooking for 1 to 2 minutes until fragrant.
  6. Pour the garlic butter over the beef in the crockpot.
  7. Tuck the halved baby potatoes around and on top of the beef.
  8. Pour the beef broth over the mixture and stir gently.
  9. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  10. Taste and adjust seasoning before serving, sprinkling with chopped parsley if desired.

Notes

For softer potatoes faster, cut them into quarters. Use Italian seasoning if thyme or rosemary are not available.
