A creamy, hands-off dinner featuring tender chicken in a silky sauce made with cream cheese, parmesan, garlic, and sun-dried tomatoes.

Ingredients

  • 4 pieces boneless skinless chicken breasts (or thighs)
  • 8 oz cream cheese (softened)
  • 1 cup parmesan cheese (or pecorino)
  • 1/2 cup sun-dried tomatoes (or fresh, chopped)
  • 2 cloves garlic (fresh)
  • 1 teaspoon Italian seasoning (or oregano and basil)
  • 1 cup chicken broth (or vegetable broth)

Instructions

  1. Pat the chicken dry and season both sides with a pinch of salt and pepper.
  2. Place the chicken pieces in a single layer at the bottom of the crockpot.
  3. In a blender, combine softened cream cheese, parmesan, sun-dried tomatoes, garlic, Italian seasoning, and chicken broth. Blend until smooth.
  4. Pour the cheese mixture evenly over the chicken, spreading gently.
  5. Put the lid on and cook on low for 180 to 240 minutes, or on high for 120 to 180 minutes until the chicken reaches 165°F (74°C).
  6. Remove the chicken, shred or slice it, then return to the crockpot and stir into the sauce.
  7. Let sit on warm for 10 minutes before serving.

Notes

If sun-dried tomatoes are packed in oil, drain and pat dry. Use softened cream cheese for best blending. Adjust seasoning to taste.
