A creamy, cheesy slow-cooked chicken dinner that’s simple to prepare and perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cream of chicken soup (canned)
  • 1 cup chicken broth (low-sodium preferred)
  • 1 packet ranch seasoning mix (or about 3 tablespoons homemade ranch blend)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in a single layer at the bottom of the crockpot. Season them lightly with salt and pepper.
  2. Whisk together the cream of chicken soup, chicken broth, and the ranch seasoning mix until smooth.
  3. Pour the soup mixture evenly over the chicken, coating each piece.
  4. Cover the crockpot and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken reaches 165 degrees F and is easy to shred with a fork.
  5. About 15 minutes before serving, sprinkle the shredded mozzarella and grated Parmesan over the chicken. Replace the lid and let the cheeses melt into a glossy top.
  6. Serve the chicken with plenty of the creamy sauce spooned over rice or pasta, and finish with chopped fresh parsley.

Notes

For a lighter sauce, stir in plain Greek yogurt at the end off-heat. Adjust seasoning as ranch packets can vary in saltiness.
