Crockpot Sausage and Green Beans

A hands-off, cozy meal of kielbasa, green beans, baby potatoes, and seasonings slow-cooked to perfection in one pot.

Ingredients

  • 1 pound kielbasa, sliced (cut into 1/2-inch rounds)
  • 1 pound fresh green beans, trimmed
  • 1 pound baby potatoes, halved
  • 1 onion, chopped (yellow or sweet)
  • 3 cloves garlic, minced
  • 1 cup chicken broth (low-sodium if preferred)
  • 1 teaspoon paprika (smoked paprika adds depth)
  • 1 teaspoon black pepper
  • Salt to taste

Instructions

  1. Place sliced kielbasa in the bottom of the crockpot in an even layer.
  2. Add trimmed green beans on top of the kielbasa.
  3. Scatter the halved baby potatoes over the beans.
  4. Sprinkle the chopped onion and minced garlic over the vegetables.
  5. Pour in the chicken broth.
  6. Season with paprika, black pepper, and salt.
  7. Stir gently to distribute seasonings and broth without breaking the potatoes.
  8. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  9. Test potatoes and beans for tenderness before serving.
  10. Serve warm and enjoy a comforting family meal.

Notes

For firmer green beans, add them during the final hour of cooking on low. Browning the kielbasa before adding to the crockpot is optional but adds flavor.
