Tender chicken thighs slow-cooked with sweet-salty teriyaki and a burst of pineapple, perfect for busy weeknights.

Ingredients

  • 2 pounds chicken thighs (boneless skinless)
  • 1 cup teriyaki sauce (store-bought or homemade)
  • 1 cup pineapple chunks (canned in juice or fresh)

Instructions

  1. Arrange the chicken thighs in a single layer in the slow cooker.
  2. Pour the teriyaki sauce evenly over the chicken.
  3. Scatter the pineapple chunks on top, including some juice if using canned.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken reaches 165°F (74°C) and is tender.
  5. Remove the lid and shred the chicken in the sauce using two forks.
  6. Stir the shredded chicken to soak up the sauce. Taste and adjust seasoning if needed.
  7. Serve hot over rice or with steamed vegetables.

Notes

For a gluten-free option, use gluten-free teriyaki sauce. Chicken breasts can be used, but cook for less time to prevent dryness.
