Delightful strawberry shortcake bars with a rich, buttery base and creamy topping, perfect for gatherings or special desserts.

  • 2 cups all-purpose flour (or half whole wheat)
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 cup salted butter (or unsalted with a pinch of salt)
  • 1 teaspoon pure vanilla extract
  • 2 cups fresh strawberries (or frozen, drained well)
  • 1 cup powdered sugar
  • 2 tablespoons cream (or milk)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Whisk together the flour, granulated sugar, and brown sugar in a bowl.
  3. Cream the butter in another bowl until smooth and uniform.
  4. Add the dry mixture into the butter, stirring until crumbly.
  5. Press the mixture firmly into the prepared baking dish.
  6. Bake for 20-25 minutes or until lightly golden on top.
  7. Remove from the oven and let cool completely.
  8. Slice the strawberries and combine them with vanilla extract while cooling.
  9. Beat the powdered sugar and cream in a separate bowl until smooth.
  10. Spread the cream mixture over the cooled crust and top with strawberries.

Notes

Use fresh strawberries for the best taste. If you prefer a sweeter topping, adjust powdered sugar to taste.
