These Keto Crunchwraps deliver delicious handheld satisfaction without the carbs, packed with seasoned beef, two kinds of cheese, and fresh toppings.

  • 2 tablespoons Unsalted Butter
  • 4 ounces Cream Cheese
  • 1/4 cup Heavy Whipping Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 pound Ground Beef
  • 2 tablespoons Taco Seasoning
  • 4 pieces Low-Carb Tortillas
  • 1 cup Sour Cream
  • 1 cup Shredded Lettuce
  • 1 medium Tomato
  • 1 cup Extra Cheddar Cheese
  • 1/4 cup Cilantro
  • 1/2 cup Jalapeño Slices (optional)
  • 1 tablespoon Olive Oil

Instructions

  1. Melt the butter over low heat in a small saucepan.
  2. Add the cream cheese in chunks and stir until smooth.
  3. Pour in the heavy whipping cream and whisk until combined.
  4. Add 1 cup shredded cheddar gradually and stir until melted into a glossy sauce. Keep warm on low heat.
  5. Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  6. Add the ground beef, breaking it up and cooking until no longer pink.
  7. Sprinkle in 2 tablespoons taco seasoning and stir, cooking for another 1 to 2 minutes.
  8. Warm a clean skillet over medium heat.
  9. Place each tortilla flat in the pan for 20 to 30 seconds per side until pliable and slightly toasted.
  10. Lay a warmed tortilla flat. Spoon about 1/4 cup of cheese sauce into the center and spread.
  11. Add about 1/3 cup seasoned beef on top, followed by extra cheddar, sour cream, lettuce, diced tomato, cilantro, and jalapeño slices if using.
  12. Fold the tortilla edges up over the filling to form a purse and tuck the final edge under so it sits seam side down.
  13. Heat a skillet over medium and add a small amount of oil or butter.
  14. Place the seam side of the crunchwrap down, pressing gently and cooking for 2 to 3 minutes until golden.
  15. Flip and cook the other side for another 2 to 3 minutes until the cheese is melted and the exterior is crisp.
  16. Let the crunchwrap rest for 1 minute before cutting in half and serving.

Notes

For a lighter wrap, substitute some cheddar for pepper jack cheese. Keep cheese sauce smooth by stirring continuously and using low heat during the melting process.
