Roasted Sweet Potato Rounds with Honey and Feta

Crispy on the edges and tender in the middle, these roasted sweet potato rounds are drizzled with honey and topped with crumbled feta for a delicious sweet-salty flavor.

Ingredients

  • 2 large sweet potatoes (about 1.5 pounds / 700 g), sliced into 1/4-inch (6 mm) rounds
  • 2 tablespoons extra virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 3 tablespoons honey
  • 1/2 cup crumbled feta cheese (about 75 g)
  • 1 tablespoon fresh thyme leaves (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Wash and dry the sweet potatoes; slice them into 1/4-inch (6 mm) rounds.
  3. Place the slices in a mixing bowl and drizzle with olive oil, salt, and pepper; toss gently to coat.
  4. Arrange the slices in a single layer on the prepared baking sheet, leaving space for air circulation.
  5. Roast for 12 to 15 minutes; flip each round and roast for another 12 to 15 minutes until edges are caramelized and centers are tender.
  6. Remove from the oven and drizzle honey over the hot sweet potato rounds.
  7. Sprinkle crumbled feta on top so it softens slightly, then add fresh thyme leaves if using. Serve warm.

Notes

Use maple syrup for a different flavor. For a dairy-free version, swap feta for firm tofu or vegan feta.
