Effortless chicken dinner cooked in the crockpot with teriyaki sauce and optional veggies, ready when you are.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup teriyaki sauce (low-sodium if preferred)
  • 1 cup broccoli florets (optional)
  • 1 cup sliced bell peppers (optional)
  • Cooked rice or noodles for serving

Instructions

  1. Place the chicken breasts in a single layer in the crockpot.
  2. Pour the teriyaki sauce evenly over the chicken so each piece is coated.
  3. Add broccoli florets and sliced bell peppers on top if using.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Shred the chicken with two forks directly in the crockpot so it absorbs the sauce.
  6. Serve over cooked rice or noodles and spoon extra sauce and vegetables on top.

Notes

You can use frozen chicken breasts but increase the cooking time by 30 to 60 minutes. For a thicker sauce, prepare a cornstarch slurry at the end and stir into the hot sauce before serving.
