Lemon Garlic Baked Salmon

A quick and easy baked salmon recipe with a lemony, garlicky marinade that results in flaky, flavorful fillets.

Ingredients

  • 4 salmon fillets (about 6 ounces each; skin on or off)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (fresh is best)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs (thyme or dill suggested)
  • Lemon slices for garnish
  • Vegetables (broccoli or asparagus) or rice for serving

Instructions

  1. Preheat the oven to 375°F (190°C) and position a rack in the middle.
  2. Pat each fillet dry with paper towels.
  3. Whisk together olive oil, lemon juice, minced garlic, salt, pepper, and dried herbs in a small bowl.
  4. Line a baking sheet with parchment paper and place the fillets skin-side down.
  5. Brush the marinade over the top of each fillet, coating evenly.
  6. Bake for 15 to 20 minutes, until the flesh flakes easily with a fork and reaches 145°F (63°C). Let rest for 3 to 5 minutes.
  7. Serve with lemon slices and your chosen sides.

Notes

For lower sodium, reduce salt to 1/2 teaspoon and add a finishing sprinkle to taste. Fresh herbs can be used instead of dried.
