A delicious and colorful fruit pizza featuring a crisp sugar cookie crust topped with a creamy layer of cream cheese and an assortment of fresh fruit.

Ingredients

  • 1 package sugar cookie dough (store-bought tube or sheet)
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar, sifted if lumpy
  • 1 teaspoon vanilla extract
  • Assorted fresh fruit: strawberries, blueberries, kiwi, mandarin orange segments, or other seasonal fruit
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a pizza stone or baking sheet.
  2. Roll the sugar cookie dough on a lightly floured surface into a roughly 12-inch circle. Transfer to the prepared sheet or stone and shape the edges to form a shallow crust.
  3. Bake the cookie crust until golden brown and set, about 12 to 18 minutes. Remove and cool completely on a wire rack.
  4. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese mixture evenly over the cooled cookie crust.
  6. Arrange sliced and whole fruit on top and garnish with mint leaves if using.
  7. Chill in the refrigerator for at least 30 minutes before slicing and serving.

Notes

For less sweetness, reduce powdered sugar to 2 tablespoons and add a teaspoon of honey or maple syrup. Can be made gluten-free and dairy-free with appropriate substitutes.
