A comforting and versatile ground turkey rice casserole that’s easy to prepare and ideal for busy weeknights.

  • 1 pound ground turkey
  • 1 cup rice (uncooked)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté ground turkey, onion, and garlic until the turkey is browned.
  3. Add rice, diced tomatoes, chicken broth, mixed vegetables, and seasonings to the turkey.
  4. Transfer the mixture to a greased casserole dish.
  5. Cover with foil and bake for 25-30 minutes.
  6. Optionally add cheese in the last few minutes for a golden, melted topping.
