Easy Healthy Broccoli Pasta

A quick and satisfying pasta dish featuring bright broccoli, garlic, and a hint of heat, perfect for busy weeknights.

Ingredients

  • 8 oz pasta, any shape
  • 2 cups broccoli florets, trimmed and bite-sized
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes, optional
  • Salt and pepper to taste
  • 1/4 cup grated parmesan cheese, optional
  • Fresh basil leaves for garnish, optional

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Reserve about 1/4 cup of the cooking water, then drain the pasta and set it aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes. Sauté for about 1 minute, stirring, until the garlic is fragrant but not browned.
  4. Add the broccoli florets to the skillet. Season with salt and pepper and cook for about 5 minutes, stirring occasionally, until the broccoli is tender but still bright green.
  5. Add the drained pasta to the skillet with the broccoli. Toss to combine, adding a splash of the reserved pasta water if you need to loosen the mixture.
  6. Taste and adjust seasoning. Serve hot with grated parmesan and torn basil leaves on top if desired.

Notes

Use whole wheat or legume pastas for added fiber and protein. For a vegan option, skip the parmesan and add a splash of lemon instead.
