A hearty and easy classic meatloaf recipe perfect for comforting weeknight dinners.

  • pounds lean ground beef (93% lean)
  • ½ cup plain breadcrumbs (Panko or gluten-free crumbs)
  • ¼ cup milk (whole or 2%—dairy-free milk works too)
  • 1 large egg (lightly beaten)
  • 1 small yellow onion (finely chopped)
  • 2 cloves garlic (minced)
  • ¼ cup ketchup (plus extra for glazing)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper (freshly ground)
  • ¼ teaspoon smoked paprika (optional)
  • 2 tablespoons brown sugar (for the glaze)

Instructions

  1. Preheat your oven to 350°F. Line a 9×5-inch loaf pan with parchment paper or grease it lightly.
  2. Combine the ground beef, breadcrumbs, and beaten egg in a large mixing bowl.
  3. Add the chopped onion, minced garlic, ketchup, Worcestershire sauce, oregano, salt, pepper, and smoked paprika if using. Stir until just combined.
  4. Transfer the meat mixture to the prepared loaf pan and press gently to shape it.
  5. Apply ketchup mixed with brown sugar on top.
  6. Bake for 45-55 minutes or until the internal temperature reaches 160°F.

Notes

Store leftovers in the refrigerator for up to 4 days or freeze wrapped tightly for up to 3 months. Reheat to an internal temperature of 165°F for safety.
