A simple, adaptable banana bread recipe that transforms overripe bananas into a delicious treat.

  • 3 ripe bananas (mashed)
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  3. In a large bowl, mash the bananas with a fork until smooth.
  4. Stir in the melted butter until well combined.
  5. Add in the sugar, beaten egg, and vanilla extract. Mix until everything is evenly blended.
  6. Sprinkle the baking soda and salt over the mixture and stir gently.
  7. Add the flour and stir just until no flour pockets remain—avoid overmixing.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the banana bread cool in the pan for 10 minutes.
  11. Transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for the sweetest flavor and best texture. Don’t overmix to keep it light and fluffy.
