A straightforward, moist banana bread that’s perfect for breakfast, snacks, or desserts.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted unsalted butter
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9 by 5 inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a large bowl until mostly smooth.
  3. Stir in the melted butter until combined and slightly cooled.
  4. Add the sugar, beaten egg, and vanilla extract. Mix until evenly blended.
  5. Sprinkle the baking soda and salt over the mixture and stir gently to combine.
  6. Add the flour and fold in with a spatula just until the flour disappears. Do not overmix.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean.
  9. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store wrapped in plastic for up to 3 days or in the fridge for up to 7 days.
