A simple and forgiving banana bread recipe that turns overripe bananas into a moist, flavorful loaf perfect for any occasion.

  • 1/3 cup melted butter, cooled slightly
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a large bowl until smooth.
  3. Stir the melted butter into the mashed bananas until well combined.
  4. Add the sugar, beaten egg, and vanilla extract. Mix until evenly blended.
  5. Sprinkle the baking soda and salt over the mixture and stir gently.
  6. Fold in the flour and stir just until the flour disappears. Do not overmix.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes.
  10. Transfer to a wire rack and cool completely before slicing.
