A quick and adaptable vegetable soup, perfect for a healthy meal any time.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (green beans, peas, zucchini, or a frozen vegetable medley)
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté until they soften, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Pour in 4 cups vegetable broth and the can of diced tomatoes with their juices.
  5. Stir in 1 teaspoon dried thyme, 1 teaspoon dried basil, and a pinch of salt and pepper.
  6. Bring the soup to a gentle simmer, then add the 2 cups mixed vegetables.
  7. Let simmer for 15 to 20 minutes, until all vegetables are tender but not mushy.
  8. Taste and adjust seasoning. Ladle into bowls and garnish with chopped fresh parsley.

Notes

Use whatever mixed vegetables you prefer. If you only have fresh zucchini or green beans, add them toward the end to maintain tenderness.
