A delicious and easy banana bread recipe that’s perfect for using up overripe bananas. Customize with chocolate chips, nuts, or spices for a cozy treat.

  • 3 medium ripe bananas (about 330g, mashed)
  • 2 cups all-purpose flour (240g)
  • 3/4 cup granulated sugar (150g)
  • 2 large eggs, room temperature
  • 1/2 cup melted unsalted butter (113g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1/2 cup chocolate chips (85g, optional)
  • 1/2 cup chopped walnuts or pecans, toasted (60g, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a large bowl until mostly smooth.
  3. Add melted butter, sugar, eggs, and vanilla extract to the mashed bananas. Mix until combined.
  4. Whisk together flour, baking soda, salt, and cinnamon in a separate bowl.
  5. Pour dry ingredients into the wet mixture and fold until no dry flour remains.
  6. Fold in chocolate chips or nuts if desired.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, checking for doneness with a toothpick at 50 minutes.

Notes

Ensure bananas are very ripe for best flavor. Avoid overmixing to keep the bread light and fluffy.
