A quick and easy dish that delivers the classic flavor of takeout egg rolls without the fuss of wrappers, featuring savory beef and crisp cabbage.

Ingredients

  • 1 pound ground beef (80/20 recommended)
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 1 tablespoon soy sauce (low-sodium if preferred)
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat and add the sesame oil.
  2. Add the ground beef to the hot skillet. Break it apart and cook until fully browned, about 6 to 8 minutes.
  3. Push the beef to the side and add the minced garlic and ginger. Sauté for 30 to 60 seconds until fragrant.
  4. Stir the garlic and ginger into the beef, then add the coleslaw mix and soy sauce.
  5. Cook, stirring occasionally, until the cabbage is tender but still slightly crisp, about 4 to 6 minutes.
  6. Taste and season with salt and pepper as needed.
  7. Remove from heat and top with sliced green onions and sesame seeds before serving.

Notes

Swap ground beef for ground turkey or chicken for a lighter option. Use tamari instead of soy sauce for a gluten-free dish.
