A deconstructed egg roll featuring savory ground beef, crisp cabbage, and aromatic seasonings, all cooked in one skillet in under 30 minutes.

Ingredients

  • 1 lb lean ground beef (85/15)
  • 1 Tbsp olive oil
  • ½ tsp fine sea salt, or to taste
  • ¼ tsp black pepper, or to taste
  • ½ medium onion, finely diced
  • 1 medium carrot, julienned or coarsely grated
  • 3 garlic cloves, minced
  • 3 cups green cabbage, thinly sliced
  • 1 tsp ground ginger (or 1 Tbsp fresh grated ginger)
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • ½ tsp granulated sugar
  • 1 Tbsp chopped green onion (optional, for garnish)
  • ¼ tsp sesame seeds (optional, for garnish)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add 1 pound ground beef. Break it apart with a spatula and cook for about 5 minutes until browned and no longer pink. Season with ½ teaspoon fine sea salt and ¼ teaspoon black pepper. Drain excess fat if desired.
  3. Stir in the diced half medium onion and the julienned or grated 1 medium carrot. Cook for 5–7 minutes, stirring occasionally, until the onion is soft and translucent.
  4. Add 3 minced garlic cloves and cook for 30 seconds, stirring constantly, until fragrant.
  5. Add 3 cups thinly sliced green cabbage, 1 teaspoon ground ginger, ¼ cup low-sodium soy sauce, 2 teaspoons sesame oil, and ½ teaspoon granulated sugar. Toss to combine. Sauté for 5–7 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
  6. Taste and adjust seasoning with more salt, pepper, or soy sauce if needed. Remove from heat and garnish with 1 tablespoon chopped green onion and ¼ teaspoon sesame seeds, if using. Serve warm.

Notes

For a lighter dish, swap ground turkey or chicken for beef. If you prefer more umami, replace half of the soy sauce with tamari.
