A warm and comforting white bean soup that is quick to prepare and packed with flavor and nutrition.

Ingredients

  • 2 cups cooked white beans
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
  3. Toss in the sliced carrots and celery, cooking for another 5 minutes until they soften slightly.
  4. Stir in the cooked white beans along with the vegetable broth, thyme, and rosemary.
  5. Bring the mixture to a boil, then lower the heat and let it simmer for 20 to 30 minutes.
  6. Season with salt and pepper according to your taste preference.
  7. Serve hot, garnishing with fresh herbs if desired.

Notes

For a creamier texture, mash a portion of the beans before adding the broth. You can use low-sodium broth for a healthier option.
