A fast and satisfying skillet-style fried rice, perfect for busy weeknights or weekend cookouts, featuring great flavor with a toasted sesame finish.

Ingredients

  • 2 cups cooked rice (preferably day-old and chilled)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Optional protein: cooked chicken, shrimp, or tofu

Instructions

  1. Preheat your Blackstone to medium-high heat.
  2. Add sesame oil and let it shimmer.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Push garlic to one side and scramble the beaten eggs until fully cooked.
  5. Add mixed vegetables and cook for 2-3 minutes until tender.
  6. Add cooked rice, separating clumps with a spatula.
  7. Pour soy sauce and season with salt and pepper. Toss to coat.
  8. Stir in green onions and any optional protein, distributing evenly.
  9. Continue cooking for another 2-3 minutes until everything is hot and slightly crispy.
  10. Serve immediately while warm.

Notes

Use day-old rice for better texture. Store leftovers in an airtight container for 3-4 days. Reheat to 165°F for safety.
