A quick and filling protein-packed pancake bowl perfect for busy mornings, ideal for customization with various toppings.

Ingredients

  • 1 cup protein powder (whey or plant-based)
  • 1/2 cup oats (rolled oats; pulse in a blender for finer texture if desired)
  • 1 tsp baking powder
  • 1/4 cup milk or milk alternative
  • 2 eggs
  • 1/4 cup Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or small ovenproof bowls.
  2. Whisk together the protein powder, oats, and baking powder in a mixing bowl.
  3. Beat the milk, eggs, Greek yogurt, and vanilla in a separate bowl until smooth and slightly frothy.
  4. Pour the wet mix into the dry mix. Stir until combined; a few small lumps are fine.
  5. Spoon the batter into the prepared tin, filling each cavity about two thirds full.
  6. Bake on the middle rack for 15 to 20 minutes until the edges are lightly golden and a toothpick comes out clean.
  7. Let the bowls cool for a few minutes before removing. Serve warm with your favorite toppings.

Notes

Store cooled bowls in an airtight container in the refrigerator for up to three days. To reheat, place on a baking sheet in a 325°F oven for 6 to 8 minutes or microwave a single bowl for 30 to 60 seconds.
