Nutritious breakfast burritos packed with protein, perfect for busy mornings and customizable to your taste.

Ingredients

  • 6 large eggs
  • 1 cup shredded cheddar cheese (100g)
  • 1 cup cooked beef sausage, crumbled and browned (150g)
  • 68 large flour tortillas (about 10 inches each)
  • ½ cup diced bell peppers (75g)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or butter
  • Optional: 1 cup fresh spinach (30g)
  • Optional: ½ cup diced tomatoes (75g)
  • Avocado slices for serving

Instructions

  1. Heat 1 tablespoon of olive oil or butter in a skillet over medium heat.
  2. Add diced bell peppers and cook for 3-4 minutes until softened.
  3. Stir in the cooked beef sausage and mix well. Remove from heat and set aside.
  4. In a bowl, whisk together the 6 large eggs with a pinch of salt and pepper.
  5. Pour the egg mixture into the skillet over medium-low heat. Stir gently with a spatula, scraping the pan’s bottom, until the eggs are just set but still moist; this should take about 4-5 minutes.
  6. Quickly warm each tortilla in a dry skillet or microwave for 10 seconds to make them pliable.
  7. Lay a warm tortilla flat and spoon about ¼ cup (60ml) of scrambled eggs in the center.
  8. Add about 2 tablespoons (30g) of the sausage and pepper mixture over the eggs.
  9. Sprinkle 2 tablespoons (20g) of shredded cheddar cheese on top.
  10. If using, add optional spinach or tomatoes.

Notes

Thoroughly cool the filling before wrapping to avoid soggy tortillas. Experiment with different vegetables for extra nutrition.
