French Onion Beef and Noodles

A warm, hearty meal combining rich beef flavors with sweet, caramelized onions, topped with melted Swiss cheese and served with egg noodles.

  • 1 lb beef stew meat, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tbsp olive oil, divided
  • 2 large onions, thinly sliced
  • 4 cups beef broth
  • 2 cups egg noodles
  • 1 cup shredded Swiss cheese
  • Fresh parsley, for garnish

Instructions

  1. Season the beef stew meat with salt and pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef and brown on all sides.
  3. Remove the beef and set aside. In the same skillet, add the remaining olive oil and the onions. Cook the onions until they are caramelized and golden brown.
  4. Add the beef back into the skillet along with the beef broth. Bring to a boil, then reduce heat and simmer for about 60 minutes, or until the beef is tender.
  5. Meanwhile, cook the egg noodles according to package instructions.
  6. Stir the cooked noodles into the beef and onion mixture.
  7. Top with shredded Swiss cheese and cover until the cheese is melted.
  8. Garnish with fresh parsley before serving.

Notes

For best flavor, let the onions cook slowly until nicely caramelized. Adjust seasoning to your liking and consider adding herbs for extra flavor.
