Frozen Yogurt Granola Cups

Cool, filling, and portable frozen yogurt cups made with a crunchy granola base, creamy Greek yogurt, and topped with fresh berries.

Ingredients

  • 3/4 cup rolled oats
  • 1/2 tsp ground cinnamon
  • 1/4 cup almond butter (smooth or crunchy)
  • 3 to 4 tbsp honey, adjusted to taste
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt
  • Berries of your choice to top (strawberries, blueberries, raspberries, or a mix)

Instructions

  1. In a medium bowl combine oats and cinnamon.
  2. Add almond butter, 3 tablespoons honey, and vanilla extract. Stir until the mixture forms a sticky, cohesive dough.
  3. Line a muffin pan with paper liners. Spoon about a tablespoon of the granola dough into the bottom of each liner.
  4. Press firmly into a compact, even base.
  5. Spoon roughly 1 to 2 tablespoons of Greek yogurt into each granola base.
  6. Top each cup with berries and sprinkle any leftover granola on top for extra crunch.
  7. Place the muffin pan in the freezer and let the cups set for at least 4 hours until solid.
  8. To serve, let the cups sit at room temperature for 5 to 10 minutes then peel off the liner and enjoy.

Notes

Use natural peanut butter or sunflower seed butter for nut allergies. Greek yogurt can be full fat or low fat. Adjust honey for sweetness.
