  • 1 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour

  • 1 tsp vanilla extract (for frosting)
  • Assorted fresh fruits (e.g., strawberries, kiwi, blueberries, bananas)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a pizza pan or a 12-inch baking sheet.
  2. In a large bowl, beat 1 cup sugar and 1 cup softened butter until smooth and slightly fluffy.
  3. Add 2 eggs one at a time, mixing well after each. Stir in 1 tsp vanilla extract.
  4. In another bowl, whisk together 3 cups all-purpose flour, 1 tsp baking powder, and 1/2 tsp salt.
  5. Gradually add the dry ingredients to the creamed mixture and stir until a soft dough forms.
  6. Press the dough evenly into the prepared pan to form a crust about 1/4 to 1/2 inch thick.
  7. Bake for 15 to 20 minutes, until the edges are lightly golden. Remove from oven and let cool completely.
  8. While the crust cools, beat together 8 ounces softened cream cheese, 1 cup powdered sugar, and 1 tsp vanilla extract until smooth and lump-free.
  9. Spread the cream cheese frosting over the cooled crust in an even layer.
  10. Arrange your sliced and whole fruit on top as desired. Slice and serve within a few hours for best texture.

Notes

For a firmer texture, chill before slicing. Use room-temperature butter and eggs for better blending. To prevent fruit from browning, toss banana slices in lemon juice before arranging.
