Ingredients

Scale
  • 2 medium zucchini, sliced
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt

  • Parmesan cheese, for serving (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant.
  3. Add the sliced zucchini and cook for 3-4 minutes until tender.
  4. Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
  5. Season with salt and pepper.
  6. Add the cooked pasta to the skillet and toss to combine, cooking for another minute to heat through.

Notes

Use seasonal tomatoes for the best flavor. Zucchini should be sliced evenly for uniform cooking.
