A comforting slow cooker recipe featuring tender beef and baby potatoes in a rich garlic butter sauce.

  • 1.5 pounds beef stew meat
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup beef broth (low sodium preferred)
  • Fresh parsley for garnish

Instructions

  1. Place the beef stew meat and the halved baby potatoes into the slow cooker. Spread them evenly.
  2. In a small saucepan over medium heat, melt the unsalted butter.
  3. Add the minced garlic to the melted butter and sauté just until fragrant, about 1 minute.
  4. Remove the saucepan from heat and stir in the salt, black pepper, dried thyme, and paprika. Mix to combine.
  5. Pour the garlic butter mixture over the beef and potatoes in the slow cooker. Toss gently to coat.
  6. Pour the beef broth into the slow cooker and stir once so the liquid is distributed.
  7. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the beef is very tender and potatoes are cooked through.
  8. Taste and adjust seasoning if needed. Serve hot, sprinkled with chopped fresh parsley.

Notes

For a dairy free option, swap the butter for an equal amount of olive oil. For more herb aroma, use 1 teaspoon fresh thyme instead of dried towards the end of cooking.
