A no-fuss garlic butter chicken recipe cooked in the crockpot, featuring tender chicken, baby potatoes, and carrots in a savory garlic butter sauce.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1.5 pounds baby red potatoes, quartered
  • 1 pound whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped parsley, optional for garnish
  • 1/2 cup chicken broth

Instructions

  1. Lightly season the chicken with salt and pepper.
  2. Place the chicken in the bottom of the slow cooker.
  3. Add the quartered baby potatoes and carrot chunks on top.
  4. Whisk together the melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
  5. Pour the garlic butter mixture over the chicken and vegetables.
  6. Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  7. Test for doneness; chicken should reach internal temperature of 165°F.
  8. Garnish with chopped parsley before serving.

Notes

For thicker sauce, whisk 1 tablespoon cornstarch with 2 tablespoons cold water and stir in during the last cooking phase.
