Garlic Butter Noodle Stir-Fry

A fast and comforting stir-fry with buttery noodles, garlic, mixed vegetables, and optional protein, all tossed in soy sauce.

Ingredients

  • 8 oz noodles (egg noodles, rice noodles, or your favorite wheat pasta)
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups mixed vegetables (bell peppers, broccoli florets, snap peas, carrots)
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional protein: cooked chicken, shrimp, or firm tofu (about 8 ounces)

Instructions

  1. Bring a large pot of salted water to a boil and cook the noodles according to package instructions. Drain and set aside.
  2. Heat a large pan or griddle over medium heat. Add the butter and let it melt until foamy.
  3. Add the minced garlic and cook about 1 minute, stirring, until fragrant but not browned.
  4. Add the mixed vegetables and sauté for 3 to 5 minutes until they are tender-crisp.
  5. If using a raw protein, add it now and cook until done; if using pre-cooked protein, add it just to warm through.
  6. Add the cooked noodles to the pan. Pour in the soy sauce and toss everything together until the noodles are coated. Taste and season with salt and pepper as needed.
  7. Serve hot.

Notes

For gluten-free, choose rice noodles or a gluten-free pasta and replace soy sauce with tamari. Adding a teaspoon of neutral oil or toasted sesame oil at the end gives extra gloss.
