Garlic Butter Steak Bites and Potatoes

A comforting dish that combines tender steak and creamy potatoes, perfect for weeknight dinners or impressing guests.

Ingredients

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon Gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Heat a large cast iron skillet over medium heat.
  2. Add the olive oil and two tablespoons of the ghee to the pan.
  3. Once melted, add the potatoes and sprinkle with garlic, thyme, oregano, salt, and pepper.
  4. Cook for 2-3 minutes before stirring the potatoes.
  5. Continue to cook until golden brown and fork-tender, about 8-10 minutes.
  6. Remove the potatoes from the pan and set aside.
  7. Increase the heat to medium-high and add the remaining ghee.
  8. Add the steak pieces and season with salt and pepper.
  9. Cook for at least 2 minutes before stirring for a good sear.
  10. Continue cooking until golden brown, about 1-2 minutes.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat to an internal temperature of 165°F.
